Certainly there must be a website out there with definitive German grading standards. I can't seem to find it. Even in German is great, as long as there are images! If you know of such a site, please share it.

You would have thought so, but I have looked 'all over the place', and cant find any better than
http://ma-shops.de.
They have thousands of coins - with images and grading. They are of course not neutral as they are selling the coins, but nobody's neutral anyway.
If anyone has a link to an standard setting site or entity for german coins, it would be welcome indeed.

I would also love to find such a thing. Pre-1948 German coins are one of my focus areas, and the German eagle is such a recurring motif that one would think there would be definitive and well-documented grading standards. I think I have a general handle on these, but some other coins, like the "wheat stalks" 5 and 10 Renten/Reichspfennigs still puzzle me.
